March 10: The sap started flowing early this week. Between Saturday and Monday about 60 gallons of sap has been collected and we started cooking yesterday (Wednesday) and we cooked again today. In all, we’ve cooked down 30 gallons so far!
We’re not sure what’s going to happen with the season. The forecast is all above freezing (day and night) before dropping back down to below freezing nights around March 15. Some of the trees in the park are looking awfully close to bud break.
